Sian and Oleg are back baking cakes to celebrate the beginning of the end of the mission. With just one month left the crew is excited to finish up the mission goals and their personal research projects. The Hawaiian Celebration Cake was submitted to the HI-SEAS recipe contest by by Joan Peterson.

Ingredients (Hawaiian Celebration Cake):

Cake recipe

  • 2 c flour
  • 2 c sugar
  • 2 Tbsp. egg white powder
  • 2 tsp. baking soda
  • 1 c shredded coconut
  • 3 c rehydrated freeze dried pineapple
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract

Filling

  • ½ cup FD papaya-chopped
  • ½ cup FD mango- chopped
  • ½ cup FD apricots-chopped
  • 1 cup FD bananas
  • 2 cups warm water

Frosting

  • 6 teaspoons butter (powdered butter + the juice from the rehydrated fruit filling – adds a fruit flavor)
  • ½ cup sugar
  • ¼ cup sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 3 teaspoons juice from the rehydrated fruit filling

Directions:

Cake

  1. Combine cake ingredients and pour into a greased and floured pan.(13 × 19 inch or 2×9 inch round pans)
  2. Bake at 350 degrees F for 35 to 45 minutes or until toothpick inserted in center comes clean.
  3. Cool completely on wire racks.

Filling for layer cake or topping for sheet cake

  1. Combine fruits in ½ c warm water and allow to soften while cake is baking/cooling. Can also blend
  2. Spread between cooled layers of round cake leaving ½ inch from edge
  3. For sheet cake frost then spread fruit over top leaving 2 inch border

Frosting

  1. Combine sugar, butter, condensed milk, and juice and beat until smooth. Frosting will be thin.
  2. Pour over cooled cake and let set.

 Honey Sesame Cake

Ingredients (Honey Sesame Cake):

  • ½ c whole wheat flour
  • ½ c all purpose flour
  • ½ c tahini paste (sesame paste)
  • 1 ½ tsp. baking powder
  • 1 tsp kosher salt
  • 3 eggs (6 tbsp. reconstituted egg crystals)
  • ¾ cup honey
  • ½ cup extra-virgin olive oil
  • ½ c lemon juice

For Glaze:

  • 2 tablespoons Olive Oil
  • 1 cup confectioner’s sugar
  • 3 tbsp of water from rehydrated fruit (mango, apricot, papaya, and banana – taken from celebration cake) Original recipe called for 3 tablespoons whole milk and a few drops of fresh lemon juice
  • 1/2 cup sesame seeds toasted and cooled (or chopped almonds)
