Ingredients:

(Brown Rice Crackers)

  • 5 tablespoons whole wheat
  • 3 tablespoons ground brown rice flour
  • 1 tbsp flax seeds
  • 2 tbsp whole quinoa
  • ¼ tsp. salt
  • ¾ cup water

(Pigeon Peas Flour Cracker)

  • 5 tablespoons whole wheat + 3 tablespoons pigeon flour.
  • ½ Tablespoon flax seeds
  • ½ Tablespoon chia seeds
  • 2 Tablespoons whole quinoa
  • 1/4 tsp. salt
  • 3/4+ cup water (you may need additional water)
  • 1/2 tsp. onion powder

Directions:

  1. Heat oven to 300° F. Mix wet and dry ingredients very well, then immediately pour watery batter onto a greased baking pan or silicone mat sitting inside the half-sheet baking pan. Tilt pan around and use spatula to spread to corners and edges
  2. Set timer 1 for 7 minutes, timer 2 for 27 minutes
  3. Bake 7 minutes
  4. Remove from oven and score batter with pastry cutter or spatula
  5. Bake another 20 minutes (if you have only one timer reset it now)
  6. Turn oven OFF, and wait at least 30 minutes before removing pan from oven
  7. Store edge pieces that are done: no moisture, softness, or bending. Bake those that aren’t done by reheating oven to 250° F, turn oven OFF, wait 30 minutes remove those that are done. Continue to bake those that are soft or bending.
